Ingredients for 10 crepes
  1. * Crepes batter, can be made the night before or at least 5-6 hours in advance.
  2. 2-1/4 cup warm water
  3. 3/4 cup coconut cream
  4. 2-1/4 cups rice flour = 270 gr
  5. 6 Tbsp cornstarch =55 gr
  6. 1 tsp turmeric powder
  7. 1/4 tsp kosher salt
  8. 3 stalks of scallions, thinly sliced
  9. * Filling: Can be prepare the night before and keep in the frig until it ready to use.
  10. 1.1 lbs pork loin cut to thin slices, season with 2 Tbsp olive oil + 1/8 tsp pepper + 1/4 tsp kosher salt (Reduce the amount of salt if using table salt.)
  11. 1 lb large shrimp peeled, deveined = 22 shrimps, season with
  12. 1 Tbsp olive oil + 1/8 tsp pepper + 1/4 tsp kosher salt (Reduce the amount of salt if using table salt.)
  13. 1 small onion, chopped
  14. 3 medium size shallots, chopped
  15. * Vegetable oil for frying the crepes
  16. * 10-12 oz bean sprouts
  17. * 2 heads leafy lettuce, washed.

  22. * Preheat the skillet on medium high heat, when the pan is hot then add 1 tsp vegetable oil, 1 Tbsp chopped onion, few slices of meat and shrimp. Saute for 1 minute then pour in 1 ladle of batter ( 1/3 cup) into the center of the pan. Swirl the pan around to move the batter out as thin as you wan. Put the lid on then drop the heat down to medium low. Cook the crepe for 3-4 mins, after that remove the lid add 1 tsp of oil around the edges of the crepe and cook for 2 more mins. Then add a small amount of the bean sprout then continue to cook for 1 more min. Gently fold the crepe in half, remove and serve it immediately. Wrap with lettuce, fresh herbs & Vietnamese dipping sauce.
  23. * To get the crispiness for this crepe you need to use good nonstick, heavy frying pan and to cook it on medium low heat. It may take 7-8 mins to cook each crepe.

The ingredients to make flour mixture include rice flour, coconut cream, turmeric, onions and salt, mixed with water. The batter is then added into a frying pan brushed with vegetable oil and forms a thin pancake. After about two minutes, the cooker will scatter some pork, shrimps and sprouts on half of the cake then fold it in half to cover the filling and cook for thirty seconds. The dish is often served with traditional sauce made from fish sauce mixed with lemon, garlic and chilli. An interesting feature about Banh Xeo is the way people eat them. The pancake will be cut into two to three pieces and rolled in sheets of rice paper together with some lettuces. The roll is dipped into the prepared sauce, which creates a stunning combination of flavor. In one bite, customers can feel the crispness, a little bit sweetness, fat and freshness of the vegetables and just want to eat more. To sum up, coming to Vietnam, if you want to explore the culinary culture here, Banh Xeo will be an amazing experience that should not be missed.

Ingredients:
- 180 g beef steak
- 100g butter
- 1 clove garlic, crushed
- 1 tsp choppep pasley
- 1/2 tsp lemon juice
- Salt and pepper to taste

Method:

- Trim the steak nicely, season with salt and pepper.
- Heat 20 g butter in a pan until hot. add steak and fry until brown, about 2 minutes. Turn it over and fry for another 2 minutes.
- Mix 80 g butter with remaining ingredient, roll up tightly and refregerate until hard. Cut the butter into slices(about 20 g /each) and top over the hot steak. One slice for one steak. Serve hot with french fries.
